We slowly cook this hand-cut section of a lamb shoulder until the meat is falling off the bone. Not a lamb fan? This dish, with its flavorful sauce studded with pearl onions and carrots, has converted more than one lamb-suspicious diner. Serve with creamy risotto for an Italian classic, or keep things super simple and offer up slices of crusty bread instead. Either some sautéed greens or a crisp salad would also be a welcome addition.
Pour a Barolo, Barbaresco, or other Piemonte red for a classic pairing. A Chianti or other Tuscan red wouldn’t be out of place either.
