A thick cut from a long and tender shoulder muscle gets coated with crushed smoked black peppercorns before being gently cooked to medium-rare. The meat stays super juicy and supremely tender, while picking up plenty of aromatic elements from the smoky pungent pepper. Serve with a baked potato and some steamed broccoli for a steakhouse meal at home.
For the full old-school effect, add a martini or a bottle of Rioja Reserva or other red with resolved tannins and a tendency toward leather and tobacco rather than fruit, such as a classic California Cab or a Bordeaux blend.
